Most Chinese and Asians would know this vegetable, Chinese Spinach, it is a very common ingredient used in our cuisine as it is inexpensive and full of goodness. The health benefits include improved eyesight, healthy blood pressure, stronger muscles and the list goes on. In our family, we would cook Chinese Spinach in soups or in a stir fry and we eat them on a regular basis.
Goji berries also known as Wolf berries are loaded with goodness too, these super fruits are known to treat diabetes, high blood pressure and eye problems. This soup is especially ideal for the elderly and children which is why it is a constant dish in our diet.
So, when you feel tired or your eyes are fatigued from all the staring at the computer screen, make this soup. It will make you feel stronger and rejuvenated in no time.
Serves 4
Ingredients
2 Bundles Chinese Spinach, wash and pluck out the tender leaves and stalks
1 Handful Goji Berries, give it a quick rinse
6 Cloves of Garlic, kept whole
Soup
800ml Hot Water
1 Handful of Dried Anchovies, Gutted and rinsed
Salt to taste
A dash White Pepper Powder
Method
In a wok, heat up about 3 Tbsp cooking oil. Fry the garlic cloves till golden brown. Scoop the garlic out, leaving the oil in the wok. Set the fried garlic aside.
In the same wok, add the anchovies and fry till light golden brown.
Pour in the hot water and bring it to a boil.
Add in the Chinese Spinach, let the soup come to a boil again and the Chinese Spinach is soft.
Add in the goji berries. Let it cook for a couple minutes, season with salt and a dash of white pepper powder, give it one final stir and its ready to serve.
Author's Notes
Alternatively, anchovy powder can be used to season the soup or use homemade/store bought chicken stock.
Do not cook the goji berries for too long as they would turn mushy and lends a sourish taste to the soup
