Quick Stir Fry Clams

This is a simple stir fry with just a few ingredients. It is key not to complicate this dish especially when the freshest ingredients are used. This way, we can better taste the sweetness of the clams this way.

Stir Fry Clams

Serves 5

Ingredients

  • 1 kg Clams

  • 2 Garlic Cloves, finely chopped

  • 1 inch ginger (peeled and cut into thin slices)

  • 2 Red Chillies & 2 Chilli Padi (remove seeds and cut into thin slices)

  • 2 Spring Onion (cut into 2" lengths)

Seasoning

  • 2 tsp Light Soy Sauce

  • 2 tsp Oyster Sauce

  • 2 tsp Sugar or to taste

  • 2 tsp Shaoxing Wine

  • 1 tsp Sesame Oil

  • 2 Tbsp Cooking Oil

Method

  1. Clean and scrub the shell of the clams thoroughly. Rinse with cold water and drain.

  2. Soak the clams in cold salted water for at least an hour or till ready to cook.

  3. Heat up a wok and pour in the cooking oil. When the cooking oil is very hot, add in the ginger slices, give it a couple of stir and add in chopped garlic, stir-fry until fragrant then throw in red chilies and give it few quick stirs.

  4. Add the clams into the wok and stir a few times and cover. Once the clams start opening up, pour in the seasonings into the wok and again give a couple stirs. Cover again until most of the clams have opened.

  5. Add the spring onions into the wok, do a few quick stirs and serve immediately.


Author's Notes


1. You can use any of your favourite clams for this recipe.

2. Always buy the clams only on the same day you are going to cook them.

3. Throw away any clams that are still closed after you have cooked them. These clams are dead and not fit for consumption.
