Ingredients
300g Pork Shoulder, Shabu Shabu Style
4-5 Green Chillies cut into 1/2" thick rings
1 Tbsp Garlic, finely chopped
Marinade
1.5 Tbsp Sugar
1 Tbsp Mirin
1 Tbsp Water Water
1 Tbsp Light Soy Sauce, Reduced Salt
1 Tbsp Sesame Oil
1 tsp Dark Soy Sauce
1 tsp Toasted Sesame Seeds, Light Crushed
1/2 tsp Sea Salt

Method
1. Add the ingredients of the marinade onto the Pork shoulder slices. Let it marinate for about 30 minutes.
2. Heat up a wok on high heat, fry the pork shoulder slices till golden brown. Make sure the meat is not over cooked.
3. Add in the chopped green chillies and stir fry till the gravy is reduced by more than half.
4. Turn off the heat, plate it up and garnish it with the toasted sesame seeds.
5. Serve it hot with rice.
